Camera/lens strategy for beginner/Tanzania

My 17yo daughter will be going on a three week community service trip to Kilimanjaro area in Tanzania in August that will include some safaris and hiking. She is not a DSLR user at this point.

I am wondering what would be the best camera/lens combination for her? A simple point and shoot would be compact and simple, but might not do justice to once in a lifetime photo opportunities. An expensive DSLR with several good lenses might be stressful for her from a security and complexity point of view.

I have a 7D and a few lenses (70-200 2.8L IS II, 17-55/2.8 IS, kit 18-135 IS, 11-17/2.8, 50/1.8 and a 1.4x converter). My father has a little used T1i with a 70-300 4/5.6 IS and a 18-55. My inclination would be to send her with my father's gear and get her familiar with it ahead of time, but would welcome suggestions, particularly for something simpler with good telephoto capability.
