But still the 3D come-alive-feeling of D70 and D200 is just not there. And I've tried Capture One (oversaturated and overdone), Aperture 3 (purple reds), Lightroom (Adobe Standard gives purple reds and the camera profiles are like Capture NX but slightly worse). And I still haven't found what I'm looking for.

Right now I'm starting to look out for either a used Fujifilm S5 Pro or a Nikon D200...

Interesting choice, Fuji new allot about colour and Nikon new allot about cameras so in the transition to digital it made sense for the two companies to work together, which they did on these two cameras. And the results reflect this The S5pro had better colours and the D200 was a better camera with good colours, I personally think the better feature set of the D200 gives it the edge.

The D200 really is the "good enough camera" if you want specialist extras like the best possible focussing for BIF then its the D300/s if you want low light then D7000 and if you have pots of money and a butler to carry your equipment then the D3X. Also some people have several cameras.
