Try it with an appropriate Picture Control and WB

Have you tried the Portrait Picture Control? Have you compared, controlling for WB and Picture Control, with other cameras to arrive at the conclusion that the D7000 produces unflattering skin tones?

I did a little testing on this (see links below), and have found through a wedding shoot that the D7000 produces skin tones that are no worse nor better than other Nikons (D300 and D700) I own.

Note : I got a lot of comments about how a doll doesn't represent human skin tones accurately. To which I reply: it's close enough, and a cross-comparison (even if the tones aren't precisely right) between cameras should reveal there's no appreciable difference nor overly orange character to one camera over the other.

See also this link about a custom Picture Control I developed, along with a comparison against Portrait and D2XMODE1.
