Sunset timelapse suggestions

First off, let me say I am new at this and have learned tons of info from this site, so thanks!

I am going to the mountains next week and would like to shoot a timelapse of the sunset with my 60d. I have been reading and practicing, but get a mixed bag of results. What are some good suggestions that I need to know? A few questions I have are:

Should I be in full Manual mode, or aperature priority mode for the changing light conditions?

What about auto white balance? Leave it on, or turn it off. I have read both.

Any suggestions on how often I need to take a shot. I plan on shooting the last hour of sunset, so I don't know if I need a shot every second, or every 30 sec, etc. My thinking is that it is always better to have to many shots, than not enough. I could always take some out.

Any help would be appreciated. Thanks.
