As a minimum I believe that you need to get at least two pictures; one underexposed and one overexposed. This allows you to capture the shadows and highlights. When I shoot HDR, I also shoot one picture with proper exposure. The shot of Mount Vernon below was taken with a combination of five bracketed exposures. Without the HDR the horses would have retained very little detail.
