2 Best Canon lenses for 3 week Florida and Washington family vacation

We plan to visit:

Washington DC – Capitolium, White House, monuments and the Mall science museums. Florida – Epcot, Magic Kindom, Animal Kingdom, Sea World, Disney Hollywood Studios, Kennedy Space Center, Buschgardens, waterparks, recration and lots of walking and exploring. We travel light, when exploring new places we normally like walk a lot, often +10 miles every day.

This is what we are planning to bring for the trip.
My wife - Panasonic LX3 24-60mm.
My son - Canon G7 35-200mm.
Myself - 5DII, 16-35/2.8L II and 70-200/4.0L IS.

16-35 WA for large monuments in Washington and general walkaround lens.

70-200 Tele for capturing my family at medium distance and for longer distances, animals at places like Bush Gardens and Sea World.

I am tempted to bring my new 35/1.4L but I like to bring as little as possible. My Camera is almost always on my sholder and any extra lens is stored with other things in a small and simple ryggsack.

Questions:

16-35L+70-200L or 35L+70-200L? I think that 80% of my photos with the 16-35 will be at 35mm for this trip. Is it better to bring 35/1.4L insted of the 16-35/2.8L II?

Any special place in Florida or in Washington DC is a ”must visit or do” for my family?

We and especially our son likes natural sciences, perhaps two days are needed at Epcot?

On last years family vacation by car to Denmark – Holland - France, Italy and Germany I took only my 5DII and the 50/1.4 and relied on my familys good p&S for WA and Tele.

My current Canon gear:
5DII, 20D, 16-35/2.8L II, 35/1.4L, 50/1.4, 135/2.0L, 70-200/4.0L IS, 400/5.6L.
