Backup Confusion

I have five physical hard drives in my PC. Four store OS, programs, and data and in total comprise six partitions. One of these four drives is 1GB and holds only my photos, maybe 400 GB at the moment and growing at about 100GB a year.

I bought an external HDD with a SATA connector and a Samsung 2TB HDD to backup my PC's entire contents.

I'm about ready to get this running and I'm wondering if I should (A) just back up everything or (B) separate the six partitions. Possibly the backup software (Acronis, which I haven't used before) either separates partitions this physically or makes it appear so.

My concerns are (1) ease of restoring the boot/program drive, (2) ease of restoring the photo drive and/or copying its contents to a portable drive if I lose the contents in the PC, and (3) speed.
