It's not just the coatings, but also the number of elements in the lens as well as the glass material itself. Each element in the lens will have a certain refractive index and a transmissivity value associated with it. Those factors will tend to add color shift, overall light reduction, and other optical anomalies such as lens flare. The degree to which these things occur, generally relates inversely to the cost of the lens.

I've got a 50mm f/1.8 II that gives me drastically different colors, especially reds, than any of my other lenses. I have to do a fair amount of color matching in PS if I switch lenses in the middle of a shoot or it can cause a jarring color shift that is very obvious. It's one of the reasons I don't like that lens too much.
