Just my two cents of which some may disagree. . . a 300mm is a 300mm. To expect stellar results on a distant subject is not practical. This is not to say that you'll never get great results but the further you go out, the chances of acquiring a stellar shot grow exponentially. I have taken more than my fare share of photos like your 2nd, and the only remedy I’ve found is bigger glass or getting closer.

The graininess wasn’t due to your shutter speed, high ISO, aperture, VR, or support; it was your distance.
