I've dug out my Sigma 120-400mm 1:4.5-5.6 APO HSM and it does indeed look like the Sigma EF bayonet mount has the same screw pattern and throat size as my spare Sigma 15-30mm SA bayonet. I haven't measured it, checked the flange height and I haven't swapped it, so you need to do your own checking, but I think it is at least possible the that you can just swap the SA bayonet for a Sigma EF bayonet. If however, you plan to swap a non-sigma lens to SA (e.g. Canon), you'll definitely have to go through the full process.

Yes, if you stay apples to apples then you are alright, but if you go apples to oranges then you'll have to do a complete conversion like you did. I had two Sigma 24-70mm f2.8 EX lenses in SA mount and decided to convert one to EF mount for my Canon 5D and it worked perfect by just using a mount off a crippled 70-300mm Sigma in EF Canon mount.
