Quick Poll: Outdoor Flash Technique

I figured I would post this as some questions arose from a previous post I did. I am fairly new to off camera flash and have been using umbrellas to achieve that dramatic look (sky underexposed and subject nicely lit with flash). My problem is that the umbrella is a pain without an assistant. So I have been considering a softbox or even bare flash.

What do you seasoned flash vets use when shooting outdoor portraits (ie weddings or engagements)? If you use bare flash, do you find the light too harsh or do you merely pull back a bit?

As an aside, I use Nikon SB900 and SB600 and will likely be looking at purchasing the Pocket Wizard Flex and Mini setup in the near future...
