Lens advice for an SLR beginner

So, I'm new to the whole SLR scene, having spent most of my time with P&S and bridge cameras. I'm not new to manual settings and knowledge of their functions and usefulness in different situations, but I am new to interchangeable lenses.
I've settled on a Canon 60D as my camera of choice, and I need some help choosing a few starting lenses to get me going. I have a budget of about $2000 (including the camera, possibly could be pushed to $2500), and don't need anything super fancy.
Most of my photography falls into the realms of landscape, family activities (basic day-to-day stuff), travel, and night shooting. I am open to all brands of lenses, doesn't need to be Canon. Just looking for some friendly advice before I make mistakes and buy things I don't need.

Also, I see a lot of kit deals online and in-store, are any of the lenses that come with those any good, or are they mostly baseline models tossed in to make the deal more appealing?
