I totally agree that this is a downside of this great camera. The sad thing is that I recently bought the 550D (or T2i in the US) and that this body DOES have the possibility to limit the auto ISO.

So, I limited my 'entry-level' camera to 1600, because I also feel comfortable to go up to 1600, but think that 3200 is just a bit over the top.

Also the 60D has an adjustable auto ISO limit. When asking Canon about if this feature would be imcluded in a version update, Canon USA replied:
Thank you for writing to us with your feedback. We appreciate you taking
the time to share your comments with us regarding the ISO settings on
your EOS 7D.

We have forwarded your comments to Canon USA through our Customer
Feedback process. This process allows us to capture important feedback
from our valued customers. As we constantly strive to improve our
products and services, your comments are vital to our continued success.

I also asked Canon Europe about this and they replied (translation):
It indeed is impossible to limit the ISO settings to 1600 with the 7D, a feature
that is included in the 550D.

We forwarded your request to the appropriate department, but cannot confirm
anything if your request will be included in a firmware update and in what
periode of time.

When there would be a firmware update, you can find this on our website.. bla
bla bla.

So.. I fear others who posted to this thread already are right, that it is a 7D mkII feature...
