I can only speak of Nikon DSLRs. a JPEG of "Basic" quality is created and stored within the RAW file. This image is displayed by image viewers. The JPEG has a color space associated with it so that it can be displayed properly by any system.

in Nikon ViewNX, the selected color space is also the default space for any images that are produced from the RAW data. The use can also override the selected color space.
