I also use dry bags; in calm water I don't attach it to the canoe (if there's enough trapped air in them, they seem to float OK). Also have a Dryzone backpack - not a cheap option, but excellent if you decide to do more aquatic stuff.

The other problem with canoes and small boats is that water tends to get everywhere, and you'll usually have wet hands. That water can enter the camera via the shutter/top buttons, unless you have a well sealed camera, so a camping towel in a pocket to get the drips off your hands, or a ziplock bag with an elasticated hole cut for the lens can be useful.

And full insurance, of course.
