D300s or D700?

I have been shooting with my beloved D200 since not long after the D200 came out.
I am presently planning to upgrade. My decision seems to be between the D300s and the D700.
My main subjects are: a) flying birds at the wildlife reserve; b) action shots of my daughter and her rollerderby team (indoors; no flash, so high ISO performance is key).
My main lenses are the 70-200VR F/2.8 (not the new one) and the 24-70 F2.8G
Will the D700 do OK for the bird shots, or will I miss the 1.5 "magnification" factor/crop factor? (Can't I always crop in NX post-processing?)
