Al-Servo 50D

Hi, I would like to know if it is possible to set my 50D on al servo and to recompose the shot. I do a lot of wildlife photography and when on one shot (in order to recompose) the animal suddenly starts to run. Then there is no time to switch to al servo. Could someone please give me advice on what to do.
