Purpose of EV reading on light meter?

I recently acquired a Sekonic L308 meter. I do not understand the purpose of the EV reading. In the aperture mode you have all the information needed to make a proper exposure, from that reading you can switch to the EV mode which gives you an EV reading. The manual does not say anything about it only saying that the EV is the total of the shutter speed and the aperture. But if you already have the shutter speed and aperture, why do you need a EV reading. Am I missing something here? Does the EV value have any bearing on how I set my camera if I set my ISO, shutter, and aperture as per the meter reading in the aperture mode?? Any clearification of this is GREATLY appriciated.
