Need help with support accessories. I am bewildered.

I am planning on a Gitzo 3541 or 2541. Could you suggest a matching head, quick-release and L-plate? I looked at RRS and am at a loss. There's S-shaped quick-releases, clamp-type quick-releases, ball-heads... To make things worse, they come in all sizes.
