I agree that the quality of the lens you are using is at least as important as what camera body you use. The two lenses you listed are fairly nice lenses, and given the range of your Tamron 18-270 it produces very good quality images.

With that being said for me the biggest difference between the 550D and the 7D is the build quality. Canon claims the that the 7D is on the same level as EOS 1DN professional level film camera in regards to it's build and weather sealing. If you shoot in demanding environments, and you expect to have your next camera for a long time, I would suggest going with the 7D.

Like other users have mentioned the 7D is substantially larger and heavier than the 550D, which could be a drawback depending on your needs.
