I would put most photo-editing applications in the CPU bound category.

Some Mac information:

http://developer.apple.com/Mac/library/documentation/Darwin/Conceptual/64bitPorting/indications/indications.html#//apple_ref/doc/uid/TP40001064-CH206-TPXREF101

A .Net CLR developer thinks it isn't always faster:

SQL Server isn't always faster in 64-bit:

http://blogs.msdn.com/sqlprogrammability/archive/2007/04/30/will-64-bit-increase-the-performance-of-my-sql-server-application.aspx

Visual Studio 2010 is 32-bit only because it doesn't gain enough from 64-bit:

http://blogs.msdn.com/ricom/archive/2009/06/10/visual-studio-why-is-there-no-64-bit-version.aspx

Overall, a good 32-bit application running on a 64-bit OS is like using the Thumb instruction set with ARM - decreases code size, increases performance for most cases without much penalty. (The WOW64 penalty is 1-2%.)
