Canon stitches with 26x33mm field size steppers, just like Sony etc.

There is no sign of this. Canon has said repeatedly that it must use stitching to make its 24x36mm ("35mm Full Frame") sensors due to the 26x33mm maximum field size of all suitable steppers, and all other major stepper makers like Nikon also make 26x33mm field size steppers: this has been the industry standard for some years now. Stitching ability is also widespread, not at all a Canon or Nikon exclusive. For example, Matsushita (Panasonic) stitched the sensor for the original Canon 1D.

Sensor design innovation rather than fab. expertise is probably the main area of DSLR sensor competition.
