Sunlight should have very near the same spectral response across the majority of a scene at the same time. Of course their are always exceptions. I would just create a profile in both the shade and/or full sun (depending on your landscape) and go with the one that gives you the nicest color rendering. (The profiles are applied after capture anyhow so you are not stuck with any one profile.)
