What's the best photo storage solution?

What kind of storage solution/workflow do you use with the ever increasing amounts of data we get with digital photography?

I realize that I need a more streamlined setup for my Mac Powerbook G4 with an external Firewire drive for my photos, another external drive for backing that up, and a third external drive for storing files, software etc. (no backup of that drive unfortunately).

With RAW images those drives fill up really quickly. I've heard of hard drive enclosures which have 2 or more removable drive bays. Would that be a solution, because as the drives fill up I just buy a new drive (along with a bay) and can at any time exchange drives? Or do you know of better solutions?
