Image Analyzer: Interpolation; Fourier Transform in Non-Scientific Photography

I tried to post this yesterday but it never showed up.

2 related questions:

I stumbled upon a program from Michael Vinther ( http://www.meesoft.com ) called Image Analyzer. This program offers various interpolation methods I have never heard of (e.g., Wiener) and an implementation of fractal interpolation. It also does Fourier Transforms.

Question 1:

has anyone used this program to do interpolation? if so, are the results better than other more common programs (e.g., Qimage or SAR)?

Question 2:

what is the use for Fourier Transform in pictorial as opposed to scientific photography?

My immediate need is to do a large poster of an old parchment document. I have a 10MP DSLR so I shall need to interpolate.
