Spot metering for the win.

All shot at ISO 3200. I usually try to meter on a face. That will often mean some overexposure elsewhere but it's usually manageable in PP. Underexposure is the killer as noted above. Even that is often manageable in PP by deepening the shadows a bit and some gentle (sometimes not-so-gentle) noise reduction.
