For practical, hands-on photography, Scott Kelby's books are hard to beat. I have all three of them, and keep them handy at all times.

Likewise, Scott Kelby's books on Photoshop or PS Elements are equally instructive and useful. They will tell you what settings to use for sharpening, etc on your pictures. Tending to be immediately useful, not going into why or how this or that works. So you learn by doing, rather than going into the theory.
