Understanding effective focal length for EF-S lenses

The fact is, there has ALWAYS been conversion factors with cameras because cameras have always had different size sensors. 8x10 large format, medium format, 35mm, 110, etc. But you NEVER heard someone say "What focal length do I need on my 35mm SLR to match my field of view from my Kodak Instamatic?" Or what focal length on Med Format to I need to match 100mm on 35mm?
