I would imagine that in the lighting situation that you described
the meter is doing what it is supposed to do. It sees the bright
light from the sun and under-exposes to render 18% grey. Try
partial metering off a neutral area, or using the exposure
compensation by giving it a stop.

Try shooting in Av mode, center weight or partial metering, set
your aperture to f11 or so. Sometimes the preset modes are not
your best option.

This was going to be my suggestion. I think you will find using Av much more satisfactory. I might also suggest custom WB--its easy and colors are so much more correct. If you don't choose to do that, then try one of the presets.
