Need Help with Children's Coloring Book

Hello all you Photoshop gurus. I've recently voluntered to design a coloring book for a children's hospital. One problem. I'm not a great illustrator, but pretty good photographer. I would like to convert b&w photos to line art for the kids to be able to color. I'm in Savannah where there are lots of statues which may make for good subjects. Is Photoshop alone up for such a task?
