Greyscale or Desaturate?

I have been shooting digital for a while now but except for a few "snapshots" I haven't printed anything. I was on here a little over a month ago looking for advice on a printer...

...but haven't made a decision yet. I've actually begun thinking that, for the minimal printing I'll be doing initially, I might just be better off to deal with a good photolab.

But in making some calls and asking questions I've been getting some varying info about the best way to print B&W, or perhaps I should say, the best way to convert to B&W before printing. To date I've been doing my conversions by desaturating a RAW file but I've been told that I'll get more neutral tones in a print if I start with a greyscale conversion. So I'm wondering what some of you have been doing when converting and printing B&W...
