XTI turn flash off and selecting JPG/RAW

Well, I've had my XTI for 4 days now and I love it. However, I have a couple of things I just can't figure out. Maybe you gurus can assist me.

1. How do I turn flash off in the Creative modes (AV,TV,P..)?

2. I found the area where I set the image quality. I set it to "L". I expected the pics to come in JPG format, but when I transferred them they show up in .tiff format (and 29MB per shot !). How do I set it to use jpg format? Also, I don't see anywhere where I can set it up to use RAW.
