Best settings for outdoor sports

So, I'm going to shoot a friends kickball game with my 40D and 55-250 IS. I know, kickball, pretty silly. In any case what settings should I use to get the best shots? It should be late afternoon and sunny. here is my guess:

Shoot in AV mode wide open (which isn't very with the 55-250) and adjust ISO as necessary to maintain shutter speeds above 1/250, aiming for most of the shots to be taken at a shutter speed of 1/500

Does this seem like the most reasonable solution? Is there a different way you would do it?
