Just to concur with most of what has been said so far...

I suggest shooting in Av mode with aperture set to 2.8 or 3.2.

Set your ISO anywhere between 200-800 to get nice high shutter speeds (1/1000 or faster) in daytime...

at night Manual @ ISO 1600, F/2.8, and the fastest shutter you can manage. (letting the camera meter at night probably isn't a good idea.)

I shoot RAW so I don't have to worry about White Balance and also to give more latitude in adjustments

Use AI-Servo focus with only the center point. I find it helpful to move the focus to the * button (custom function III I think.) Obviously, you want the high speed drive mode (6.5 fps).

The best way is to try a variety of different settings to see what works best, but there will be a general consensus about many of the settings, as you see in most of the replies so far.
