Taking photos of stuffed animals

A local school has asked me to take photos of stuffed animals for an upcoming fund raiser. Most of the animals are small 8" or so and I was thinking about getting a piece of white foamboard and placing it on top of a stool to take the shots. For shots with larger animals I was going to also use white seamless that I have. I have available 2 AB800's and 2 AB400's along with various SB's and umbrella's. Any suggestions or alternatives to taking these kind of photos would be appreciated. Thanks!
