Why no hard/unmodified light in portraiture.

it seems as if most everybody these days are only interested in using the softest lighting possible in portraiture. Huge soft boxes, 3-umbrella rigs, reflectors the size of doors, and those silly salad bowls that go on flash units.

Why no hard or unmodified lighting?
