I'd bring the 70-200 VR, but probably leave it behind if I hiked into the canyon. For the kinds of pictures I take out West, the weight of the 70-200 isn't worth it on a strenuous hike. If you want an intermediate lens, see if you can borrow a 28-105. The IQ is very good, and it is a light lens. I like to use a 55/2.8 Micro for shooting into the sun - it's practically flare-free and also very light, incredibly sharp and fringe-free.
