Help...Panorama

I am on vacation in Cape Cod and a long-time dear friend has wanted a large shot of their harbor. I would love to shoot a panorama of the harbor, stitch it, and have it printed, all with in the next week. I have never done a panorama so need some advice....

What do you recommend for stitching software?

I have tripod and ball-head but am not sure what the best procedure is.

How about printing size as well?
