HDR -- should I underexpose or overexpose?

I've been playing around with High Dynamic Range photography with my 5D lately, and was wondering, in general, which is easier/more successful to recover from, the highlights, or the shadows? I know it's probably better to just over and underexpose by more than what I will need to make sure I'm covered on both ends, but I've been also playing with the single-raw approach on moving subjects also, where I recover highlights and shadows from a single raw image, and that is what's prompted this question. If I only have one shot to make, am I better off by slightly over, or underexposing in hopes of recovering more later via the raw image. Or, should I just center the exposure?
