Depth of Fieild technical question...

In the absence of £1800 to buy a 85mm F1.2 lens I'm trying to figure out how to get a very narrow depth of field on a portrait I need to take.

I have a 5D with a whole bag of good lens, in fact here's a list of the lens' I have:
50mm f1.4
100mm f2.8
16-35mm f2.8
28-70mm f2.8
70-200mm f2.8

So, what I'm trying to find out is, is there a chart somewhere that tells you what the depth of field will be at a given focal length with the widest aperture?

I'm going to be taking a head to toe photo of a model sitting down on a sofa or bed, and the look I'm trying to go for is the eyes pin sharp with her body slightly soft and the background very soft...

I'm thinking that if I have enough room perhaps the 70-200mm at 200mm with me as close to her as the focus will allow at the widest aperture should created the smallest depth of field...
What do you think?
