Here's what I would get:

Canon 30D $1120
EF-S 10-22 $675
EF 50 f/1.8 $75

With some cash left over for an extra battery, compact flash card and reader, and camera bag.

The EF-S 10-22 is ultra wide angle for travel-getting scenes on narrow streets, etc. It is my MOST FUN lens. The 50 f/1.8 is low-light enough for catching those scampering grandchildren.

Now this is not the most versatile starter kit--you will want to cover other focal ranges/apertures later. But you said you're not in a hurry...so I believe you.

Also, you might consider the XTi instead of the 30D. The XTi is a fine camera, and it would give you some extra cash for lenses. As mentioned by another poster, the lenses are where you really want to sink your investment. In that case, I would recommend:

Canon Xti $680
EF-S 10-22 $675
50 f1.4 $290
85 f/1.8 $310
