SD800IS setting questions

I'm curious about a couple things I've read on these forums.

First, how do you force the camera to do a specific ISO (400, 800, 1600).

Second, the only setting a can adjust is exposure. How are you accessing sharpness and other settings?

Are there hidden sub-settings?
