30D pics look plastic/too perfect online... Printing???

They look this way to MY eye... I have heard others say this too... not saying I am right, just the pics I see online from the Canon 30D look too plasticy perfect while the Nikon D200 online pics look more three dimensional, life like, emotional, etc... again, to my eye... maybe not to yours.
So, what about print? Can I get the more natural look of the Nikon D200 after PP and printing?
My dilemna:
I love the menus, feel & controls of the Nikon D200...
But I love the PRICE and feel in my smaller hands of the Canon 30D.
I love the look of Nikon pictures with Nikon glass.
I will be shooting in low light, but can't deal with that sorta plasticy look of the NON-noisy 30D shots.
Any thoughts?
