I shoot at ISO800 all the time, and in the prints I get the noise is not a problem (I'm printing 20x16). And that's on a 10D - on the 20D noise is going to be even less of an issue.

Sure, it would be nice to have it in the viewfinder, and it does make sense to check every time, but if you routinely leave it at 400 or 800 it's not going to ruin any pictures. And you'll have the bonus of getting nice high shutter speeds or wide apertures too.
