DR issues since reading all the coments about the S3, and there's
no question that I had a problem fitting the highlights and shadows
into the histogram with many of these pictures. As a sub-issue,
though, it seems that the blue channel was the hardest to control,
especially with the S2. Is this a common experience? Does the S3
do a better job of not just expanding overall DR but maintaining
consistency betwen the channels?

I cannot really answer your question. However, last Wednesday I went with a group on a photo shoot. Two photographers were trying to "get it right." I overheard them talking about their failure to get a good histogram of the scene. I took a shot we reviewed my S3's histogram and one commented - "Why that's perfect." I went on and they continued trying. I don't know what DSLRs they had. But I am confident that they won't bad mouth the S3.
