EOS 20D dpi Question

Sorry if this is a stupid question, but I only made the move to digital about a week a go and am still a little "uneducated" in certain things...

My understanding was that magazines require dpi of > 300 for publication, but when I open images from my 20D (shot in jpeg, Large fine) in Photoshop, then go into Image Size, the dpi is only 72.

While I appreciate this can be changed in Photoshop (with the result that the image becomes considerably larger), surely if the original image taken by the camera is only 72dpi, increasing it at later date will not have any effect on image quality? Should I be shooting in RAW to get higher dpi?

Could somebody please explain this to me? Much appreciated...
