Thank you all for your kind words and encouragement. I wanted the background to be blown out because I wanted to be the appearance of clean, and lite desert. I was really happy to get this result in camera without blowing out the subject itself. Also, I didn't want to show the plate below holding the molten chocolate even though it had a cool shape, because I wanted the appearance of floating in the air, so I had light it from underneath as well and blow it out.
