The following are suggestions, not rules.
The best time for photography is during a rehearsal. You can move around without upsetting an audience, and you might even be able to get up on stage.
Let the actors or dancers know you are taking pictures, and perhaps they will direct their action towards your camera. They may be more willing to participate if you offer them your photos.
For most stage lighting, set your white balance to incandescent. This will generally give you good color as you remember seeing it.
High ISO is usually needed to get a shutter speed adequate to stop motion.
You may find it best to photograph dancers in daylight, a bright studio, or with powerful strobes. Time your shots at the peak of motion.
If you want to take photos during a performance, be sure to get permission first; you will likely need a fast telephoto lens, and be sure not to annoy the members of the audience with your movement or a loud shutter.
